The Shirasagi Uji Matcha is a prime example of Japanese tea artistry. This bright green tea is cultivated in the historic region of Uji, which is known for its exquisite tea culture. It is produced in a 100% traditional way, which means that no agricultural chemicals are used and the leaves are carefully picked by hand. This fine product is an absolute rarity, with a total production of less than 2.5 kilograms per year.
The Nakanishi family, who have been growing organic tea since 1980, ensure that every aspect of production is masterfully executed. The tea garden itself stretches over 1.25 hectares and is completely covered with black netting to create optimal growing conditions for the tea leaves. The harvest is carried out once a year, exclusively by hand, by a team of around 30 helpers.
Processing and taste
The Shirasagi Uji Matcha has a uniquely refreshing and fruity taste without the usual astringency. Intense and bright green in the bowl, it develops a soft, almost sweet aftertaste that delights the senses. Compared to the Takeno Jôô Uji Matcha, it offers slightly less umami and sweet nuances.
The leaves are processed into tencha and then ground into the finest matcha on a stone mill. The artisanal steps guarantee a tea of outstanding quality and taste.
Availability
Due to its rarity and quality, Shirasagi Uji Matcha is only available in limited quantities. The matcha it contains is officially certified organic in accordance with EU organic regulations and is available in tins of 30 grams.
