Kamairicha (釜炒り茶, “kettle-roasted tea”) is a specially refined Japanese green tea variety. Unlike classic sencha, its leaves are not steamed during production, but placed in a kettle (kama) and roasted for a short time. This method is otherwise only used in China. It gives this tea its unique aroma.
